Pico de gallo

Pico de gallo:

The nice thing about this recipe is you can change it however you’d like. I’m pretty sure Aaron and I make it differently every time without it changing flavor very much. I’m not a huge fan of fresh tomatoes so I like more onion, however Aaron loves tomatoes and puts more tomatoes. Either way it’s always wonderful. So all of these measurements are pretty approximate.. Like the tomatoes (any kind or you can mix a few different kinds) we like Roma tomatoes in it a lot, but we’ve mixed different kinds together with good results.

3 Roma Tomatoes, chopped
2 big tomatoes, chopped (remove as many seeds as you can)
1 White Onion, chopped
2-3 Jalapeno peppers, chopped
1 bunch of Cilantro, chopped (we love cilantro so if you don’t just do it to taste, or omit)
Vinegar
Salt and pepper to taste
Throw it all in a bowl and pour vinegar over until it’s just covered (if you don’t like a lot of vinegar just pour a little in, or you could substitute it with the juice of 1 or more limes)
