Easy Corn Dog Muffins

Yields 24 Muffins

1/2 Cup Corn Meal
1 1/2 Cups Flour
2/3 Cup sugar
1 Tablespoon Baking Powder
1/2 tsp Salt
2 Eggs, beaten
1 1/4 Cups Milk
1/3 Cup Oil
3 Tablespoons Melted Butter

Preheat oven to 350°.

Combine dry ingredients, whisk in wet ingredients.

Either use 24 cupcake liners or spray two muffin pans with cooking spray. Put one tablespoon of batter into each cup. Add 4-5 slices of hot dog and top with 1 more tablespoon of batter. It's ok if some of the hot dog pokes out of the top.

Bake at 350° for 18-20 minutes or until edges are golden.

Try adding cheese and/or JalapeƱos for more options!
